Crispy Fried Oysters

~~Ingredients~~
1 pint fresh shucked oysters (about 20-25 oysters)
1 cup whole (full-fat) buttermilk
1 tablespoon hot sauce
1 cup self-rising flour
1/2 cup plain cornmeal
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon Salt
1/2 teaspoon black pepper
Vegetable oil, for frying
Lemon wedges and sauce (for serving)

Drain the oysters and gently pat them dry with paper towels. Place them in a bowl and pour the whole buttermilk and hot sauce over them. Stir then to incorporate. Let them soak for 10-15 minutes.

Prepare the Breading:
In a shallow dish, mix together the flour, cornmeal, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.

In a large skillet, fryer or Dutch oven, heat about 2 inches of vegetable oil to 350 degrees.

Remove the oysters from the buttermilk. Dredge each oyster in the flour mixture, pressing gently to ensure an even coating. Place them on a plate and repeat with the remaining oysters.
Working in batches, carefully add the coated oysters to the hot oil. Fry for 2-3 minutes, or until golden brown and crispy. Avoid overcrowding the pan.
Use a slotted spoon to remove the fried oysters and place them on a plate lined with paper towels to absorb excess oil.
Serve the fried oysters immediately with lemon wedges and dipping sauces.
