Ingredients:

For the salmon:
- 2 salmon fillets (skin-on or skinless)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

For the creamy spinach and mushrooms:
- 2 tbsp butter
- 200g mushrooms, sliced (button or cremini)
- 2 garlic cloves, minced
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup chicken or vegetable broth
- 1/4 tsp thyme (optional)
- Salt and black pepper to taste

Directions:

1. Cook the salmon: Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the salmon for 3-4 minutes per side, starting with the skin-side down if applicable. Remove and set aside.

2. Sauté the mushrooms: In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and cook for 3-4 minutes until softened and golden. Stir in the minced garlic and cook for 1 minute until fragrant.

3. Prepare the creamy spinach: Add the chicken or vegetable broth and let it simmer for 1-2 minutes. Stir in the heavy cream and thyme (if using), then add the spinach. Cook until the spinach wilts and the sauce thickens slightly. Season with salt and pepper to taste.

4. Assemble and serve: Plate the creamy spinach and mushrooms, then place the seared salmon on top. Spoon additional sauce over the salmon if desired.
