Pork Rib Soup with Chinese Yam and Corn
Ingredients:
1 kg pork ribs
100 g carrots, cut into chunks
100 g sweet corn, cut into chunks
200 g Chinese yam, peeled and cut into chunks
( use radish if you don't have a yum)
5 g ginger slices
1 scallions (chopped)
Salt to taste
Soy sauce to taste
Optional:
goji berries, red dates, greens, lotus seeds, and roasted chestnuts.
Instructions:
Blanch the ribs: In a large pot, bring water to a boil. Add the pork ribs, scallions, and ginger slices. Boil for a few minutes, then rinse the ribs under cold water.
Prepare the soup: In a clean pot, add the blanched ribs, ginger slices, and enough water to cover everything by 1 inch. Bring to a boil, then lower to a simmer.
Add the vegetables: Add the carrots, corn, and Chinese yam to the pot. Simmer for about 45min to 1 hour, or until the ribs and vegetables are tender.
Season the soup: Add salt and soy sauce to taste.
Optional additions: If desired, add goji berries, red dates, and greens to the soup and simmer for a few more minutes.
Garnish with chopped scallions
Serve hot: Ladle the soup into bowls and enjoy!
