Do Nothing Cake 🍍🍰
The Do Nothing Cake is a simple yet incredibly moist and delicious dessert that requires minimal effort. This tropical treat features a luscious pineapple-infused cake topped with a rich coconut and nut frosting, making it a perfect choice for any occasion.
Ingredients
Cake:
2 cups all-purpose flour
2 cups granulated sugar
2 eggs, slightly beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 large can (20 ounces) crushed pineapple with juice
Frosting:
1 stick (1/2 cup) butter
1 cup sugar
1 can (5 1/2 ounces) evaporated milk
1 cup chopped walnuts or pecans
1 cup shredded coconut
Directions
Preheat the oven to 350°F (175°C).
In a large bowl, whisk together all the cake ingredients until just combined.
Pour the batter into a greased 13×9-inch baking dish. Bake for 30-40 minutes or until a wooden toothpick inserted in the center comes out clean. Avoid overbaking.
While the cake is baking, prepare the frosting. In a small saucepan, heat the butter, sugar, and evaporated milk until boiling.
Cook and stir for about 5 minutes, or until slightly thickened.
Remove from heat and stir in the shredded coconut and chopped nuts.
Remove the cake from the oven and, using a kabob skewer or the handle of a wooden spoon, poke holes all over the cake. This allows the hot frosting to seep into the cake.
Pour the hot frosting over the cake, spreading it out to ensure even coverage.
Allow the cake to cool slightly before cutting.
