Baked Apple Fritters 🍎😋

Ingredients:

For the Fritters:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 large eggs
1/2 cup whole milk
2 tbsp unsalted butter, melted
1 tsp vanilla extract
2 medium apples, peeled, cored, and diced

For the Glaze:
1 cup powdered sugar
2-3 tbsp milk
1/2 tsp vanilla extract

Directions:

Preheat the oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the batter: In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, beat the eggs, milk, melted butter, and vanilla extract until combined. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the diced apples.
Shape the fritters: Scoop 1/4-cup portions of the batter onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly with the back of a spoon to form rough fritter shapes.
Bake: Bake for 12-15 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean. Allow to cool slightly.
Make the glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency with more milk or powdered sugar as needed.
Glaze the fritters: Drizzle the glaze over the warm fritters or dip the tops for a thicker glaze. Let the glaze set for a few minutes before serving.

Tips:
Use tart apples like Granny Smith for a sweet-tangy balance.
Sprinkle with a little extra cinnamon sugar for added flavor before glazing.
