Creamy Italian Meatball Soup 🍲🧀
Ingredients:
1 lb frozen or homemade meatballs
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes, undrained
1 cup heavy cream
1/2 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1 cup small pasta (like ditalini or orzo)
2 cups fresh spinach, chopped
1/2 cup shredded Parmesan cheese
1/4 cup fresh parsley, chopped (optional)
Directions:
1️⃣ In a large pot, heat olive oil over medium heat. Add diced onion and cook until soft.
2️⃣ Add garlic and cook for 30 seconds until fragrant.
3️⃣ Pour in chicken broth and diced tomatoes. Stir in Italian seasoning, salt, and black pepper.
4️⃣ Add meatballs and bring to a simmer. Cook for 10 minutes.
5️⃣ Stir in pasta and cook until tender (about 8-10 minutes).
6️⃣ Reduce heat to low and stir in heavy cream and spinach. Cook for 2 more minutes until spinach is wilted.
7️⃣ Sprinkle Parmesan cheese on top and stir.
8️⃣ Serve warm, garnished with fresh parsley if desired. Enjoy!
