Churro Stuffed French Toast with Cinnamon Sugar
Ingredients:
4 slices of thick bread (preferably brioche or Texas toast)
4 oz of cream cheese, softened
1/4 cup of brown sugar
1 teaspoon of cinnamon
1/2 teaspoon of vanilla extract
2 large eggs
1/4 cup of milk
2 tablespoons of butter (for frying)
1/4 cup of granulated sugar
1 teaspoon of cinnamon (for dusting)
Directions:
In a small bowl, mix the softened cream cheese, brown sugar, cinnamon, and vanilla extract until smooth. Spread this mixture evenly onto two slices of bread.
Place the remaining two slices of bread on top of the cream cheese mixture to form sandwiches.
In a shallow bowl, whisk together the eggs and milk until well combined.
Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
Dip each sandwich into the egg mixture, ensuring both sides are well-coated. Carefully place the dipped sandwiches onto the skillet.
Cook the French toast for about 3-4 minutes per side, or until golden brown and crispy.
While the French toast is cooking, mix the granulated sugar and cinnamon in a separate bowl.
Once cooked, remove the French toast from the skillet and immediately dip each side in the cinnamon-sugar mixture to coat.
Slice the churro stuffed French toast and serve warm.
