Decadent Mint Chocolate Swirl Cheesecake .

Ingredients:

Crust:

1 1/2 cups chocolate cookie crumbs

1/4 cup melted butter

Cheesecake Filling:

24 oz (3 blocks) cream cheese, softened

3/4 cup granulated sugar

3 large eggs

1/2 cup sour cream

1/2 cup heavy cream

1 tsp vanilla extract

1/2 tsp peppermint extract

1/2 cup melted dark chocolate

Green food coloring (optional)

Ganache Topping:

1/2 cup heavy cream

1 cup dark chocolate chips

Fresh mint leaves for garnish (optional)

Directions:

Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.

In a bowl, mix chocolate cookie crumbs with melted butter. Press into the bottom of the springform pan to form an even crust. Bake for 10 minutes, then set aside.

In a large mixing bowl, beat cream cheese and sugar until smooth.

Add eggs one at a time, beating after each addition. Mix in sour cream, heavy cream, vanilla, and peppermint extract.

Remove half of the batter and mix with melted dark chocolate.

Add green food coloring (if using) to the remaining batter.

Pour alternating spoonfuls of the chocolate and mint batters into the crust, swirling gently with a knife for a marbled effect.

Bake for 50-60 minutes, or until the center is just set. Let cool at room temperature, then refrigerate for at least 4 hours.

For the ganache, heat heavy cream until steaming, then pour over chocolate chips. Let sit for 2 minutes before stirring until smooth.

Pour ganache over the chilled cheesecake and spread evenly.

Garnish with fresh mint leaves and serve.
