Rich and Creamy Chicken & Mushroom Pasta
Ingredients:
8 oz (225 g) fettuccine or pasta of your choice
2 tablespoons olive oil
1 pound (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon garlic powder
Salt and pepper, to taste
8 oz (225 g) mushrooms, sliced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian herbs
Fresh parsley, chopped, for garnish
Directions:
Begin by cooking the pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, seasoning them with garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through, approximately 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced mushrooms and sauté until they are tender and golden, about 4-5 minutes.
Return the cooked chicken to the skillet and pour in the heavy cream. Stir in the grated Parmesan cheese and dried Italian herbs, allowing the mixture to simmer for a few minutes until it thickens slightly.
Combine the cooked pasta with the creamy chicken and mushroom sauce, tossing to coat evenly.
Serve hot, garnished with freshly chopped parsley.
