Pulled Pork Grilled Cheese Sandwich

Ingredients:

For the Pulled Pork:
2 lbs pork shoulder or pork butt
Salt and pepper to taste
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 cup barbecue sauce
1/2 cup chicken or beef broth
For the Grilled Cheese Sandwich:
8 slices bread of your choice
2 cups shredded cheese (cheddar, mozzarella, or a blend)
Butter for spreading
Directions:

Season the pork shoulder or butt with salt and pepper on all sides.
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side.
Remove the pork from the skillet and set aside. In the same skillet, add the chopped onion and garlic. Cook until softened and fragrant, about 2-3 minutes.
Return the pork to the skillet and add barbecue sauce and broth. Bring to a simmer, then cover and reduce the heat to low. Cook for 6-8 hours, or until the pork is tender and easily shreds with a fork.
Once the pork is cooked, shred it using two forks. Mix the shredded pork with the sauce in the skillet until well combined.
To assemble the grilled cheese sandwiches, spread butter on one side of each slice of bread. Place a generous amount of pulled pork and shredded cheese on the unbuttered side of four bread slices. Top with the remaining bread slices, buttered side facing out.
Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook until golden brown and crispy on both sides, and the cheese is melted, about 3-4 minutes per side.
Remove from the skillet and let cool slightly before serving.
