Ingredients:
6 medium potatoes, peeled and cubed
1/2 cup mayonnaise
2 tablespoons yellow mustard
1/3 cup chopped red onion
1/4 cup chopped parsley (or celery for crunch)
1 tablespoon vinegar or pickle juice (optional)
Salt and pepper to taste
Directions:
1. Boil the cubed potatoes in salted water for 10-12 minutes, until fork-tender. Drain and let cool.
2. In a large bowl, mix the mayonnaise, mustard, vinegar (if using), salt, and pepper.
3. Add the cooled potatoes, chopped onion, and parsley. Gently stir to coat everything evenly.
4. Chill in the fridge for at least 1 hour before serving for best flavor.
