Caramelized Apple Fritter Bites
Ingredients:
2 large apples (Granny Smith or Honeycrisp), peeled and diced
1 tablespoon butter
1 tablespoon brown sugar
1/2 teaspoon cinnamon
1 cup all-purpose flour
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/3 cup milk
1 egg
1/2 teaspoon vanilla extract
Oil for frying
For Glaze:
1 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
In a skillet, melt butter over medium heat. Add diced apples, brown sugar, and cinnamon. Cook until apples are tender and caramelized, about 5-6 minutes. Set aside to cool.
In a medium bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
In a separate bowl, whisk together milk, egg, and vanilla.
Add the wet ingredients to the dry and stir until just combined. Fold in the cooled caramelized apples.
Heat oil in a deep pan to 350°F (175°C).
Drop spoonfuls of batter into the hot oil and fry for 2–3 minutes per side, until golden brown. Don’t overcrowd the pan.
Remove fritters and drain on a paper towel-lined plate.
In a small bowl, whisk together powdered sugar, milk, and vanilla to make the glaze.
Drizzle glaze over warm fritters or dip them in for a full coat.
