Decadent Spiced Carrot Cake Bars with Luscious Cream Cheese Frosting

Ingredients:

2 cups finely grated carrots

1 cup all-purpose flour

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1/2 cup vegetable oil

1/4 cup crushed pineapple (drained)

1/4 cup chopped walnuts (optional)

1 tsp vanilla extract

1/2 tsp baking soda

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

Cream Cheese Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 1/2 cups powdered sugar

1 tsp vanilla extract

Directions:

Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.

In a large bowl, whisk together eggs, sugars, oil, and vanilla until smooth.

Add in the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix just until combined.

Fold in grated carrots, pineapple, and chopped walnuts (if using).

Pour the batter into the prepared pan and spread evenly.

Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

Allow to cool completely in the pan before frosting.

To prepare the frosting, beat cream cheese and butter together until creamy. Add vanilla and gradually beat in powdered sugar until fluffy.

Spread frosting over the cooled carrot cake bars. Slice into squares and serve.
