Mango Lime Tartlets
Ingredients:
For the tartlet shells:
1 1/4 cups all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, cold and cubed
1-2 tablespoons ice water
For the lime cream filling:
1 cup heavy cream
1/4 cup powdered sugar
Zest of 1 lime
1 tablespoon fresh lime juice
For the topping:
1 large ripe mango, peeled and thinly sliced
Extra lime zest for garnish
Fresh mint leaves (optional)
Directions:
Prepare the tartlet shells: Preheat your oven to 350°F (175°C). In a food processor, pulse the flour and powdered sugar to combine. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, until the dough just comes together. Press the dough into 6 tartlet pans, smoothing it out evenly along the bottom and sides.
Bake the shells: Place the tartlet shells on a baking sheet and bake for 10-12 minutes, or until golden brown. Let them cool completely.
Make the lime cream filling: In a mixing bowl, whip the heavy cream, powdered sugar, lime zest, and lime juice until stiff peaks form.
Assemble the tartlets: Once the tartlet shells are cool, spoon or pipe the lime cream filling into each shell. Arrange the mango slices on top in a fan or decorative pattern. Garnish with extra lime zest and fresh mint leaves if desired.
Serve: These tartlets are best served fresh. Enjoy the creamy, tropical flavors!
