Keto Lasagna Casserole
Ingredients
Meat Sauce:
1 lb ground beef (or ground turkey, pork, or sausage)
2 tbsp olive oil
½ cup onion, diced
3 garlic cloves, minced
1 cup mushrooms, sliced (optional, or add zucchini/eggplant)
1 cup low-carb marinara sauce (sugar-free, ~4g net carbs per serving)
1 tsp Italian seasoning
Salt & pepper to taste
Cheese Layer:
1 cup ricotta cheese (or cottage cheese)
1 egg
½ cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Instructions
Preheat oven: Set to 375°F (190°C).
Cook the Meat Sauce:
Heat olive oil in a skillet, sauté onion until soft.
Add garlic and mushrooms, cook 2 minutes.
Add ground beef, season with salt, pepper, and Italian herbs.
Stir in marinara sauce and simmer 10 minutes.
Prepare the Cheese Mixture:
In a bowl, combine ricotta, egg, and Parmesan cheese. Mix until smooth.
Assemble the Casserole:
In a baking dish, spread a thin layer of meat sauce.
Add a layer of ricotta mixture.
Sprinkle with mozzarella cheese.
Repeat layers until ingredients are used up. Finish with mozzarella on top.
Bake:
Bake uncovered for 25–30 minutes, until bubbly and golden brown on top.
Let rest for 5–10 minutes before slicing.
