🇮🇹 Pasta alla Gricia
Ingredients:
9 oz (250 g) pasta (rigatoni or spaghetti)
5 oz (150 g) guanciale, diced
3.5 oz (100 g) Pecorino Romano cheese, grated
1 tbsp (15 ml) olive oil
Freshly ground black pepper
Instructions:
🔪 Dice guanciale, fry in olive oil until crispy.
🍝 Cook pasta until al dente, reserve some pasta water.
🧀 Toss pasta with guanciale, add cheese and pasta water to make a creamy sauce.
✨ Finish with lots of cracked black pepper.
