Ingredients:
1/2 cup butter, softened
1/2 cup pumpkin puree
1 cup sugar
1 large egg
1 tsp vanilla extract
2 cups flour
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp baking soda
1/4 tsp salt
Cinnamon sugar (for rolling)
Directions:
Preheat oven to 350°F (175°C).
Cream butter, pumpkin, and sugar until fluffy. Beat in egg and vanilla.
Mix in flour, spices, baking soda, and salt until dough forms.
Roll dough into balls, coat in cinnamon sugar, and place on baking sheet.
Bake 10–12 minutes until soft and golden.
