Chicken Fajita Casserole 🍲🌶️🧀
📋Ingredients:
2 pounds boneless, skinless chicken breasts, sliced
3 bell peppers, sliced (assorted colors)
1 large onion, sliced
2 tablespoons olive oil
2 tablespoons taco seasoning
1 cup salsa
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro (optional)
Salt and pepper to taste
Tortilla chips or warmed tortillas, for serving
Directions:
Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
In a large skillet over medium-high heat, add olive oil. Add sliced chicken breasts and cook until browned and no longer pink, about 5-7 minutes.
Remove chicken from skillet and set aside. In the same skillet, add sliced bell peppers and onions. Cook until softened, about 5 minutes. Season with salt, pepper, and taco seasoning.
Return the cooked chicken to the skillet and mix well with the peppers and onions.
Spread half of the salsa in the bottom of the prepared baking dish. Layer the chicken and pepper mixture on top. Sprinkle with shredded cheddar and Monterey Jack cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish with chopped cilantro, if desired, before serving. Serve hot with tortilla chips or warmed tortillas.
