🌿🍯 Caramel Mint Gâteau Cake

🧁 Ingredients
For the Chocolate Cake Layers:
• 1 ½ cups (190g) all-purpose flour
• ½ cup (50g) unsweetened cocoa powder
• 1 ½ tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 1 cup (200g) sugar
• 2 large eggs
• ½ cup (120ml) vegetable oil
• 1 cup (240ml) buttermilk
• 1 tsp vanilla extract
• ½ cup (120ml) hot water or coffee (for richness)
For the Mint Cream Filling:
• 300ml heavy cream (cold)
• 2 tbsp powdered sugar
• ½ tsp peppermint extract (or to taste)
• Optional: a few drops of green food coloring
For the Caramel Sauce:
• ¾ cup (150g) sugar
• 3 tbsp water
• ½ cup (120ml) heavy cream
• 2 tbsp butter
• Pinch of salt
• Optional: a touch of vanilla extract
For Decoration:
• Chocolate shavings or curls
• Fresh mint leaves
• Extra caramel drizzle
🧁 Instructions
1. Make the Cake:
1 Preheat oven to 175°C (350°F). Grease and line two 20cm (8-inch) cake pans.
2 In a large bowl, sift together flour, cocoa, baking powder, baking soda, and salt.
3 In another bowl, whisk sugar, eggs, oil, buttermilk, and vanilla until smooth.
4 Combine wet and dry ingredients, then stir in the hot water/coffee.
5 Pour batter into the pans and bake for 25–30 minutes. Cool completely.
2. Make the Mint Cream Filling:
1 Whip the cold cream with powdered sugar and peppermint extract until stiff peaks form.
2 (Optional) Add a few drops of green food coloring for a minty look.
3. Make the Caramel Sauce:
1 In a saucepan, heat sugar and water over medium heat until it turns amber (don’t stir).
2 Carefully add the cream (it will bubble), then stir in butter and salt.
3 Let it cool slightly before using. It thickens as it cools.
4. Assemble the Cake:
1 Slice cake layers in half horizontally (for 4 thinner layers), if desired.
2 Layer the cake:
◦ Cake layer
◦ Mint cream
◦ Drizzle of caramel�Repeat until all layers are stacked.
3 Cover the top with more mint cream or caramel (or both).
4 Chill for at least 2 hours to set.
✨ Decoration Ideas:
• Drizzle caramel down the sides for a drip effect
• Add chocolate shavings or curls on top
• Garnish with fresh mint for a fresh touch
