Double Smash Cheeseburger with Caramelized Onions
Ingredients:
1 lb ground beef (80/20 blend for juiciness)
4 slices cheddar cheese (or American cheese)
2 brioche buns, toasted
1 large onion, thinly sliced
1 tbsp butter
1 tbsp olive oil
1 tsp sugar
1 tbsp mayonnaise
1 tsp Dijon mustard
2 tsp ketchup
Salt and black pepper to taste
Directions:
Heat a skillet over medium heat, add butter and olive oil, then sauté onions with sugar and a pinch of salt until golden and caramelized (about 20–25 minutes). Set aside.
Divide beef into 4 equal balls. Heat a cast-iron skillet or griddle over high heat.
Place 2 beef balls onto the hot skillet, smash them down with a spatula until thin. Season with salt and pepper.
Cook for 2–3 minutes until edges are crispy, flip, and immediately top each patty with a slice of cheese. Cook another minute. Repeat for all patties.
Mix mayonnaise, Dijon mustard, and ketchup for a simple burger sauce.
Assemble the burger: Spread sauce on toasted brioche buns, layer two cheesy patties, top with caramelized onions, and close with the top bun.
Serve hot with fries or onion rings.
