Ingredients:

- 1 cup + 1 tablespoon (250 g) Mascarpone
- 5 oz (140 g) Ladyfingers (savoiardi cookies)
- 2 tablespoons Espresso
- ⅓ cup + 1 teaspoon (50 g) Powdered sugar
- ½ teaspoon Vanilla bean paste or extract
- ¼ cup (30 g) Cocoa powder
- 4 tablespoons (60 g) Nutella (optional)

Directions:

1. Crush the ladyfingers into fine crumbs using a food processor or by placing them in a sealed bag and crushing with a rolling pin.
2. Combine the crushed ladyfingers, powdered sugar, and cocoa powder in a large bowl.
3. In a separate bowl, mix the mascarpone, espresso, and vanilla bean paste until smooth. If using Nutella, gently fold it into the mascarpone mixture.
4. Gradually add the dry ingredients to the mascarpone mixture and stir until fully combined and a dough-like consistency forms.
5. Chill the mixture in the refrigerator for about 30 minutes to firm up.
6. Once chilled, scoop small portions and roll them into balls.
7. Optional: Roll the truffles in extra cocoa powder or dust with powdered sugar for extra presentation.
