Mediterranean Spinach Grilled Cheese
Ingredients:
2 slices of whole grain bread
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup sun-dried tomatoes, chopped
1/4 cup black olives, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
1/2 cup shredded mozzarella cheese
1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Remove from heat and let cool slightly.
2. In a bowl, combine the sautéed spinach, feta cheese, sun-dried tomatoes, black olives, garlic powder, salt, and pepper. Mix well.
3. Spread the remaining tablespoon of olive oil on one side of each slice of bread.
4. On the un-oiled side of one slice, layer half of the mozzarella cheese, followed by the spinach mixture, and then the remaining mozzarella cheese. Top with the second slice of bread, oiled side facing out.
5. Heat the skillet over medium heat and place the sandwich in the pan. Cook for 3-4 minutes until golden brown, then carefully flip and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
6. Remove from the skillet, let cool for a minute, then slice in half and serve warm.
