Mini Meatloaf Muffins with Mashed Potato Frosting 🍽️
Delicious and fun individual meatloaf muffins topped with creamy mashed potatoes!
📋 Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 1 egg
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups mashed potatoes (prepared)
- 1/4 cup cheese (optional, for topping)
- Chives or parsley for garnish (optional)
📝 Instructions
1. Preheat the oven to 350°F (175°C).
2. In a bowl, combine ground beef, breadcrumbs, onion, egg, milk, garlic powder, salt, and pepper. Mix well.
3. Fill a muffin tin with the meatloaf mixture.
4. Bake for 20-25 minutes or until cooked through.
5. Prepare mashed potatoes and let them cool slightly.
6. Once the meatloaf muffins are ready, pipe the mashed potatoes on top as frosting.
7. If desired, sprinkle cheese on top and garnish with chives or parsley.
