Southern Sweet Potato Casserole
Ingredients:
- 3 cups sweet potatoes
- 1/2 cup sugar
- 1/2 cup butter
- 2 eggs, beaten
- 1 teaspoon vanilla
- 1/3 cup milk
Topping:
- 1/3 cup melted butter
- 1 cup light brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
Directions:
1. Preheat oven to 350°F (175°C).
2. Boil or bake the sweet potatoes until soft, then peel and mash them in a large bowl.
3. Add sugar, butter, beaten eggs, vanilla, and milk to the mashed sweet potatoes. Mix thoroughly until smooth.
4. Pour the sweet potato mixture into a greased 9x13-inch baking dish.
5. In a separate bowl, combine melted butter, light brown sugar, flour, and chopped pecans to make the topping.
6. Sprinkle the topping evenly over the sweet potato mixture.
7. Bake for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
