Bacon & Mushroom Crustless Quiche
Ingredients:
6 large eggs
1 cup heavy cream
1 cup mushrooms, sliced
4 slices bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
1/4 cup green onions, chopped
Salt and pepper to taste
1 tbsp olive oil for sautéing
Directions:
Preheat oven to 350°F (175°C).
Heat olive oil in a pan over medium heat. Sauté mushrooms until softened, about 5 minutes. Remove from heat.
In a bowl, whisk together eggs and heavy cream. Add salt and pepper to taste.
Stir in sautéed mushrooms, crumbled bacon, cheese, and green onions.
Pour mixture into a greased pie dish or baking dish.
Bake for 25-30 minutes until the center is set and lightly browned on top.
Allow to cool for a few minutes before slicing and serving.
