Banana Blueberry Breakfast Cookies

Ingredients:
2 ripe bananas, mashed
1 cup rolled oats
½ cup blueberries
¼ cup honey or maple syrup
1 teaspoon vanilla extract
½ teaspoon cinnamon
A pinch of salt
Instructions:
Preheat Oven and Prep Baking Sheet:
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Combine Ingredients:
In a large bowl, mix together the mashed bananas, rolled oats, blueberries, honey or maple syrup, vanilla extract, cinnamon, and salt until well combined.
Shape Cookies:
Drop spoonfuls of the mixture onto the prepared baking sheet.
Flatten the cookies slightly to form cookie shapes.
Bake:
Bake for 15-18 minutes, or until the edges turn golden brown.
Cool:
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Tips and Variations:
Bananas: Use very ripe bananas for the best sweetness and moisture.
Oats: Use rolled oats (old-fashioned oats) for the best texture. Quick oats can also be used, but the texture will be slightly different.
Sweetener: Honey or maple syrup can be used interchangeably. You can also use agave nectar.
Blueberries: Fresh or frozen blueberries can be used. If using frozen, do not thaw them.
Add-Ins:
Add chopped nuts (walnuts, pecans, almonds) for extra crunch and flavor.
Add seeds (chia seeds, flax seeds) for added nutrients.

Freezing: These cookies can be frozen. Place cooled cookies in a freezer-safe bag or container.
Nut Butter: A tablespoon or two of nut butter can be added to the recipe.
