This Halloumi and Butternut Squash Orzo Bake is the perfect cozy, hands-off vegetarian meal. With the hearty sweetness of butternut squash and the salty, golden halloumi, it's a comforting dish thatβs easy to prepare. Orzo adds a delightful texture, while cherry tomatoes, paprika, and pesto elevate the flavor beautifully.
Ingredients:
1 red onion, cut into wedges
500g butternut squash (frozen cubes)
3 garlic cloves, crushed
2 tsp olive oil
1 tsp paprika
300g dry orzo
700ml vegetable stock
250g cherry tomatoes
2 tbsp pesto
225g halloumi, cut into 2cm cubes
Sea salt & black pepper
Directions:
Preheat oven to 200Β°C.
Toss onion, butternut squash, garlic, olive oil, paprika, salt, and pepper in a roasting dish. Bake for 30 minutes.
Add orzo, vegetable stock, cherry tomatoes, and pesto. Mix well, place halloumi cubes on top.
Bake for another 15-25 minutes until the halloumi is golden and the orzo is cooked through.
