Beef and Barley Soup in Slow Cooker

Barley is full of heart healthy goodness such as fiber, protein, magnesium, potassium, folate, and vitamin B6. The high fiber help to lower cholesterol as well. Added with iron rich beef and vegetables it's a power meal!

Ingredients:
2 cups diced onion
1 cup barley
4 cups beef stock
1 cup celery diced
1/2 cup diced tomato
2 bay leaves
1 teaspoon Italian seasoning
2 pounds beef cubes
2 tablespoons oil
3 cloves minced garlic
1/4 teaspoon black pepper
Salt to taste

In a pan, add oil. Fry the beef on both sides. Then, add onions and saute till translucent. Add the garlic and saute till fragrant. Remove from the pan.
In a crockpot, add the fried beef with the onions and garlic. Add the rest of the ingredients. Cover and cook on low for 8 hrs. Season with salt if needed. Garnish fresh parsley before serving. Enjoy!
