Cinnamon Roll Muffins

Sweet and fluffy muffins that taste just like cinnamon rolls, with a swirl of cinnamon sugar in every bite. Perfect for breakfast or as a snack!

Recipe

Ingredients:
2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted

3/4 cup buttermilk

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

Cinnamon Filling:
1/4 cup unsalted butter, softened

1/2 cup brown sugar, packed

1 tablespoon ground cinnamon

Glaze:
1/2 cup powdered sugar

2 tablespoons milk

1/4 teaspoon vanilla extract

Directions:
Preheat oven to 350°F (175°C) and grease or line a muffin tin with paper liners.

In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, whisk together melted butter, buttermilk, granulated sugar, egg, and vanilla extract until smooth.

Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

In a small bowl, combine softened butter, brown sugar, and cinnamon to make the cinnamon filling.

Spoon a small amount of muffin batter into each muffin cup, then swirl in about 1 teaspoon of cinnamon filling. Top with a little more batter, then swirl in the remaining cinnamon filling.

Use a toothpick or knife to swirl the cinnamon filling through the batter in each cup.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

While the muffins are cooling, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.

Drizzle the glaze over the cooled muffins before serving.
