Baked Salmon with Potatoes and Asparagus
Ingredients:
4 salmon fillets (6 oz each)
1 lb baby potatoes, halved
1 bunch asparagus, trimmed
3 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon paprika
1 tablespoon lemon juice
Zest of 1 lemon
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Lemon wedges, for serving
Directions:
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
In a bowl, toss potatoes with 1 tablespoon olive oil, half the garlic, salt, pepper, and paprika. Spread on the baking sheet and roast for 15 minutes.
Meanwhile, in a small bowl, mix remaining olive oil, garlic, oregano, lemon juice, and lemon zest.
After 15 minutes, remove the tray and push potatoes to one side. Add salmon fillets to the center and asparagus to the other side.
Brush the salmon and asparagus with the garlic lemon oil.
Return to oven and bake for an additional 12–15 minutes, until salmon is flaky and potatoes are tender.
Garnish with fresh parsley and serve with lemon wedges.
