Cowboy Butter Chicken Pasta

Ingredients:

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional, for extra heat)
1/2 cup all-purpose flour
1 cup chicken broth
1 cup heavy cream
1/2 cup butter, cut into cubes
1/4 cup chopped fresh cilantro
1/4 cup chopped green onions
1 pound pasta (penne, rotini, or your favorite shape)
1/2 cup shredded cheddar cheese (optional)

Instructions:

1. Season the chicken cubes generously with salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using). Toss to coat evenly.
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. In the same skillet, melt the butter over medium heat. Whisk in the flour until smooth and no lumps remain. This creates a roux.
4. Gradually whisk in the chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer, stirring occasionally.
5. Reduce the heat to low and stir in the heavy cream. Continue to simmer for 5-7 minutes, or until the sauce has thickened slightly.
6. Stir in the cooked chicken, cilantro, and green onions. Season the sauce with additional salt and pepper to taste.
7. Meanwhile, cook the pasta according to package directions. Drain the pasta and add it to the skillet with the chicken and sauce. Toss to coat the pasta evenly.
8. If desired, stir in the shredded cheddar cheese until melted.
