For the Red Velvet Cupcake Base:

1 tbsp cocoa powder
Β½ tsp baking soda
ΒΌ tsp salt
Β½ cup buttermilk
1 tsp white vinegar
1 tsp vanilla extract
Β½ cup unsalted butter, softened
ΒΎ cup granulated sugar
1 large egg
1 tbsp red food coloring
For the Strawberry Cheesecake Swirl:
4 oz cream cheese, softened
2 tbsp granulated sugar
1 tsp vanilla extract
ΒΌ cup strawberry puree or jam
1 tbsp flour

1οΈβ£ Preheat oven to 350Β°F (175Β°C) and line a 12-cup muffin tin.
2οΈβ£ In one bowl, mix flour, cocoa, baking soda, and salt. In another, combine buttermilk, vinegar, and vanilla.
3οΈβ£ Cream butter and sugar, then beat in egg and food coloring.
4οΈβ£ Alternate adding dry ingredients and buttermilk mix to the batter. Mix until smooth.
5οΈβ£ In a small bowl, beat cream cheese, sugar, flour, strawberry puree, and vanilla until creamy.
6οΈβ£ Fill each cupcake liner ΒΎ full with batter. Add a spoonful of cheesecake swirl and swirl gently with a toothpick.
7οΈβ£ Bake 18β22 mins until set and a toothpick comes out clean. Cool before serving.
