Easy Crepes and Pancakes Recipes
1. Crepes Recipe
1 cup flour
1/4 tsp salt
2 eggs
1 cup milk
3 Tbsp butter softened
1/4 cup water
Steps:
In a large bowl, add eggs, milk, butter, water, flour and salt. Whisk till fully combine. Rest for about 20-30 minutes.
In a medium heat, Warm a pan and brush with oil. Add 1/3 cup of mixture. Tilt the pan in circular motion so it covers the bottom of the pan. Allow it to set and flip until golden brown on the other side. Repeat the process till done. You can fold, roll, or fill the crepes with fruits when serving. Enjoy!
2. Pancake Mix
2 cups self-rising flour
2 tablespoons sugar
1/4 cup butter, softened
1 3/4 cup milk
2 eggs
In a large bowl, add eggs, butter, and sugar. Whisk and mix till combined. Add flour, and fold batter using spatula.
Heat a pan over medium heat. Spray with oil or brush with butter. Pour about 1/4 cup for each pancake and cook until the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with process till all pancakes are done. Serve with fresh fruits, honey or syrup. Enjoy!
3. Japanese Soufflé Pancakes
Recipe:
4 egg yolks
4 egg whites
3 tablespoons sugar
1/2 cup cake flour
1 tsp baking powder
1 pinch salt
3 tbsp whole milk
butter for cooking
Steps:
In a bowl, add egg yolks, milk and salt. Whisk until creamy. Add sifted flour and baking powder . Mix well.
In a separate bowl, beat egg whites until stiff peaks while slowly adding sugar.
Mix the yolk butter to the egg whites mixture gradually using a spatula.
Heat a pan in a very low heat. Add butter or spray butter.
Use 1/4 cup as a scooper. Cover the pan and let it cook for 2 minutes.
Remove cover and check bottom if brown or you can add 1 more minute. Slowly flip the pancake. Cover the pan and let it cook for another 2 minutes. Check with a toothpick if the middle is cooked and set. Repeat the process. Serve immediately.
