1 ¾ cups all-purpose flour
½ cup granulated sugar
¼ cup light brown sugar, packed
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
⅓ cup vegetable oil
¾ cup buttermilk (or milk + 1 tsp vinegar)
1 large egg
1 tsp vanilla extract
1 cup fresh strawberries, chopped
1 cup fresh rhubarb, chopped

Instructions:
1. Preheat your oven to 375°F (190°C) and either line a muffin tin with paper liners or lightly grease it.
2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon by whisking them together.
3. In another bowl, mix together the oil, buttermilk, egg, and vanilla extract until the mixture is smooth.
4. Pour the wet mixture into the dry ingredients and gently stir until just combined—be careful not to overmix.
5. Carefully fold in the chopped strawberries and rhubarb using a spatula or spoon.
6. Distribute the batter evenly among the muffin cups, filling each about three-quarters full.
7. Bake for 18–22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
