Apple Upside Down Cake Recipe

Ingredients:

1 cup (2 sticks) unsalted butter, softened
1 ¾ cups granulated sugar, divided
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
1 cup buttermilk
6 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced about ¼ inch thick

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch cast iron skillet or a 9x13 inch baking pan. You can also use baking spray with flour for easier cleanup.

2. In a large bowl, cream together the softened butter and 1 cup of the granulated sugar until light and fluffy. This is best done with an electric mixer, but can be done by hand with considerable elbow grease.

3. Beat in the eggs one at a time, then stir in the vanilla extract.

4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.

6. In the prepared skillet or baking pan, arrange the apple slices in a circular pattern or any pleasing design. Sprinkle the remaining ¾ cup of granulated sugar evenly over the apples.

7. Pour the batter evenly over the apples and sugar.

8. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean. For a 9x13 inch pan, reduce baking time to 40-45 minutes.

9. Let the cake cool in the pan for at least 10-15 minutes before inverting it onto a serving plate. A wire rack placed over the serving plate can make this step easier.

10. Serve warm or at room temperature. Enjoy!
