Ingredients
For the Chicken:
🐓 2 large chicken breasts
🧂 1 tsp salt
🌶️ 1/2 tsp black pepper
🌿 1 tsp garlic powder
🍋 1 tbsp lime juice
🥄 1 tbsp olive oil
For the Salad:
🥑 2 ripe avocados, diced
🍅 2 medium tomatoes, diced
🧅 1/2 red onion, finely chopped
🌱 1/4 cup fresh cilantro, chopped
🥗 4 cups mixed greens (optional)
For the Dressing:
🍋 Juice of 1 lime
🥄 2 tbsp olive oil
🌶️ 1/4 tsp chili flakes
🧂 Salt to taste
Directions
Prep Chicken: Rub chicken breasts with salt, pepper, garlic powder, lime juice, and olive oil. Grill on a preheated grill or skillet for 4-5 minutes per side until fully cooked. Let rest for 5 minutes, then slice into strips.
Make Salad: In a large bowl, combine avocados, tomatoes, red onion, and cilantro. Toss gently to mix. Add mixed greens if desired.
Prepare Dressing: In a small bowl, whisk lime juice, olive oil, chili flakes, and salt.
Assemble: Top the salad with grilled chicken strips. Drizzle dressing over the salad. Toss lightly and serve fresh!
Notes
Add a sprinkle of crumbled feta or goat cheese for extra flavor!
For more crunch, toss in some roasted sunflower seeds or chopped nuts.
