Family-Style Cheesy Beef Enchiladas 🌮❤️
Ingredients:
1 lb ground beef
1 packet taco seasoning
1 cup corn kernels (cooked or canned)
1 cup diced tomatoes
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
6 large flour tortillas
1 cup enchilada sauce
Fresh parsley or cilantro for garnish
Directions:
1. Preheat your oven to 375°F (190°C).
2. Cook ground beef in a skillet over medium heat until browned. Drain any excess fat.
3. Add taco seasoning and 1/4 cup water, cooking for another 2-3 minutes.
4. Stir in corn and diced tomatoes, then remove from heat.
5. Fill each tortilla with the beef mixture and a sprinkle of cheddar cheese. Roll tightly and place seam-side down in a baking dish.
6. Pour enchilada sauce over the rolls and top with remaining cheddar and mozzarella cheese.
7. Bake for 20 minutes, or until cheese is bubbly and golden.
8. Garnish with parsley or cilantro and serve hot!
