2 medium Yukon Gold potatoes, cut into Β½-inch cubes
2 tbsp olive oil
3 cloves garlic, minced
Β½ tsp dried oregano
Salt & freshly cracked black pepper to taste
2 tbsp hot honey (or regular honey with a pinch of red pepper flakes)

8 oz cremini mushrooms, finely chopped
2 tbsp olive oil
2 cloves garlic, minced
ΒΌ cup fresh basil leaves πΏ
2 tbsp grated Parmesan cheese π§
Β½ cup heavy cream
1 tbsp Greek honey (or regular honey), preferably with a pinch of cinnamon
Β½ tsp red pepper flakes (adjust to your spice preference)
1 tbsp lemon juice π
Salt & freshly cracked black pepper to taste

Instructions
1. Marinate & Grill the Chicken
In a bowl, toss chicken slices with olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper.
Heat a grill pan or outdoor grill to medium-high heat. Grill chicken for 2-3 minutes per side, or until cooked through and lightly charred. Set aside.
2. Prepare the Hot Honey Roasted Potatoes
Preheat oven to 425Β°F (220Β°C).
In a bowl, toss potato cubes with olive oil, minced garlic, oregano, salt, and pepper.
Spread potatoes in a single layer on a baking sheet and roast for 20 minutes.
Remove from oven and drizzle with hot honey. Toss to coat and return to the oven for another 5-10 minutes, or until golden brown and crispy.
3. Prepare the Ultra-Creamy Spicy Mushroom Pesto with Greek Honey
Heat olive oil in a skillet over medium heat. Add chopped mushrooms and minced garlic. Cook until mushrooms are softened and have released their liquid, about 5-7 minutes.
Transfer the cooked mushroom mixture to a food processor or blender. Add basil leaves, Parmesan cheese, heavy cream, Greek honey, red pepper flakes, and lemon juice.
Blend until ultra-smooth and creamy. Season with salt and pepper to taste.
4. Assemble & Serve
Arrange the hot honey-glazed crispy potatoes on plates or in a bowl.
Top with the garlic-herb grilled chicken slices.
Drizzle generously with the ultra-creamy mushroom pesto infused with spicy Greek honey.
