Moist Vanilla Loaf Cake

Ingredients:

1 cup (225g) unsalted butter, softened

1 cup (200g) granulated sugar

4 large eggs, room temperature

2 tsp vanilla extract

1¾ cups (220g) all-purpose flour

1½ tsp baking powder

¼ tsp salt

¼ cup (60ml) whole milk

Optional Glaze:

1 cup (120g) powdered sugar

1–2 tbsp milk

½ tsp vanilla extract

Instructions:

Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper.

Cream butter and sugar together for 3–5 minutes until light and fluffy.

Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Whisk flour, baking powder, and salt in a separate bowl. Gradually add to the butter mixture, alternating with the milk. Do not overmix.

Pour batter into the prepared pan and smooth the top.

Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Tent with foil if browning too quickly.

Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Optional glaze: Mix powdered sugar, vanilla, and milk until smooth. Drizzle over cooled cake.
