CRISPY AMISH ONION FRITTERS
Ingredients:
2 cups finely chopped onions (sweet or yellow)
1 cup all-purpose flour
1 tbsp cornstarch (for extra crispiness)
1 tbsp sugar
1½ tsp baking powder
1 tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp paprika
¾ cup milk
Vegetable oil, for frying
Instructions:
Prepare the batter:
In a large mixing bowl, combine flour, cornstarch, sugar, baking powder, salt, pepper, garlic powder, and paprika.
Gradually add milk and stir until a thick batter forms.
Fold in the chopped onions until well coated.
Heat the oil:
In a large skillet, heat about ½ inch of oil over medium-high heat until shimmering (around 350°F/175°C).
Fry the fritters:
Drop spoonfuls of the onion mixture into the hot oil, flattening slightly with the back of a spoon.
