I've tried a couple different chaffle recipes, but this one is my standout favorite. I have used them as breakfast waffles, or as sandwich bread for a turky and ham club sandwich - so good!
4 oz cream cheese, softened
2 large eggs
1/2 cup almond flour
1 tsbp Swerve
1 tsp baking powder
Blend cream cheese and eggs in a blender (I use my ninja), then add almond flour, swerve and baking powder and blend once more. Cook about 3 tbsp at a time in a mini waffle maker (my best keto investment @ $10) for 3 minutes until golden brown. Let stand for a couple minutes to cool and firm up. Makes 6, 103 calories each, 1.4g net carbs, 9.25 g fat, 3.75g protein per waffle. Enjoy!
