Mediterranean Beef & Orzo Skillet
Ingredients:
1 lb ground beef
2 tablespoons olive oil
1 red onion, sliced
3 cloves garlic, minced
1 zucchini, sliced
1 red bell pepper, sliced
1 cup cherry tomatoes, halved
1/4 cup Kalamata olives, sliced
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
1 ½ cups cooked orzo pasta
1/4 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
Juice of ½ lemon
Directions:
Cook orzo pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, about 6–7 minutes. Season with salt and pepper.
Stir in sliced onion and garlic. Cook for 2–3 minutes until softened.
Add zucchini and bell pepper, and sauté for 5 minutes until veggies are just tender.
Stir in cherry tomatoes and olives. Cook for another 2–3 minutes until tomatoes begin to soften.
Add oregano and smoked paprika. Mix well to coat everything evenly.
Add the cooked orzo into the skillet and toss everything together until fully combined.
Remove from heat, squeeze in fresh lemon juice, then top with crumbled feta and fresh parsley.
Serve warm straight from the pan makes a full, cozy one-skillet dinner.
