Garlic Butter Chicken Bites with Cheesy Bowtie Pasta in Mozzarella Sauce

Ingredients:

1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 teaspoon Cajun seasoning
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
12 oz bowtie pasta (farfalle)
2 cups heavy cream
1 cup chicken broth
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
4 oz cream cheese, softened
1 teaspoon Italian seasoning
Fresh parsley, chopped (for garnish)

Directions:

1. Bring a large pot of salted water to a boil and cook the bowtie pasta until al dente according to package directions. Drain and set aside.
2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the chicken pieces, season with Cajun seasoning, paprika, salt, and pepper, then sear until golden-brown and cooked through, about 6–8 minutes. Transfer to a plate and keep warm.
3. In the same skillet, melt the remaining 2 tablespoons butter. Add garlic and sauté for 1 minute until fragrant.
4. Pour in chicken broth and heavy cream, stirring to deglaze the pan. Bring to a gentle simmer.
5. Add cream cheese and stir until melted and smooth. Lower the heat slightly.
6. Stir in mozzarella, Parmesan, and Italian seasoning. Let the sauce simmer for 4–5 minutes, stirring often, until thickened and creamy.
7. Add the cooked bowtie pasta into the skillet and toss to coat evenly with the sauce. Simmer for 2 minutes to allow the pasta to absorb the flavors.
8. Return the chicken and any juices to the skillet. Toss everything gently together, or plate separately for a clean presentation.
9. Garnish with chopped parsley and a sprinkle of Parmesan before serving.
