Pumpkin Brownies
Ingredients:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup pumpkin puree
- 3/4 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup chopped walnuts (optional)
Directions:
1. Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan or line it with parchment paper.
2. In a large bowl, whisk together melted butter and sugar until combined.
3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and pumpkin puree.
4. In a separate bowl, sift together flour, cocoa powder, baking powder, salt, cinnamon, and nutmeg.
5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
6. Fold in chopped walnuts if using.
7. Pour the batter into the prepared baking pan and spread evenly.
8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
9. Allow brownies to cool in the pan before slicing and serving.
