ππΏπ§ Creamy Sauce: Spicy Mushroom Basil Alfredo Sauce with Melted Mozzarella:
2 tbsp butter π§
8 oz cremini mushrooms, sliced
2 cloves garlic, minced π§
Β½ tsp red pepper flakes (adjust to desired spice level, for sauce)
ΒΌ cup fresh basil leaves πΏ
1 Β½ cups heavy cream
ΒΎ cup grated Parmesan cheese π§ (for sauce)
Β½ cup shredded mozzarella cheese π§ (for topping)
Salt & freshly cracked black pepper to taste
Instructions:
Prepare Roasted Parmesan Broccoli:
Preheat oven to 200Β°C (400Β°F). Line a baking sheet with parchment paper for easier cleanup.
In a large bowl, toss broccoli florets with 2 tbsp olive oil, salt, and pepper.
Spread in a single layer on the prepared baking sheet and roast for 15 minutes.
Remove from oven, sprinkle with ΒΌ cup grated Parmesan cheese, and return to oven for another 5-10 minutes, or until tender-crisp and nicely browned with crispy edges.
Marinate & Cook Garlic & Chili-Marinated Chicken Bites:
While broccoli roasts, in a bowl, toss chicken bites with 2 tbsp olive oil, 3 cloves minced garlic, 1 tsp red pepper flakes, smoked paprika, oregano, salt, and pepper. Let marinate for at least 15 minutes.
Heat a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from skillet and set aside.
Prepare Spicy Mushroom Basil Alfredo Sauce with Melted Mozzarella:
In the same skillet (no need to clean), melt butter over medium heat.
Add sliced mushrooms and 2 cloves minced garlic. Cook until mushrooms are softened and lightly browned, about 5-7 minutes.
Stir in Β½ tsp red pepper flakes (if using for sauce) and fresh basil leaves. Cook for 30 seconds until fragrant.
