Cheddar Garlic Herb Chicken with Creamy Tortellini Alfredo

Ingredients:

4 boneless, skinless chicken breasts
2 tablespoons olive oil
4 tablespoons garlic butter, divided
2 teaspoons Cajun seasoning
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth

For the Tortellini Alfredo:
20 oz cheese tortellini, fresh or frozen
4 tablespoons butter
4 cloves garlic, minced
1/2 cup heavy cream
4 oz cream cheese, softened
1 cup grated Parmesan cheese
1 cup shredded cheddar cheese
1/2 teaspoon Italian seasoning
Salt and pepper to taste

Directions:

1. Prepare the Chicken: In a bowl, mix Cajun seasoning, paprika, salt, and pepper. Rub the mixture evenly over the chicken breasts.
2. Sear the Chicken: Heat olive oil and 2 tablespoons of garlic butter in a large skillet over medium-high heat. Add the chicken and sear for 5-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
3. Deglaze the Pan: Add chicken broth to the skillet and scrape up any browned bits from the bottom. Stir in the remaining 2 tablespoons of garlic butter.
4. Cook Tortellini: While the chicken is cooking, prepare the tortellini according to package directions. Drain well.
5. Make Alfredo Sauce: In a large saucepan, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in heavy cream and cream cheese until smooth.
6. Add Cheese: Reduce heat to low. Stir in Parmesan cheese and cheddar cheese until melted and smooth. Season with Italian seasoning, salt, and pepper to taste.
7. Combine: Add the cooked tortellini to the Alfredo sauce and toss to coat evenly.
8. Serve: Slice the chicken breasts and arrange over the creamy tortellini alfredo. Serve immediately, ensuring each portion has plenty of sauce and melted cheese.
