Ingredients:
- 1 cup lentils
- 2 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 4 cups mashed potatoes (made with plant-based milk and vegan butter)
- Salt and pepper to taste

Directions:
1. Let's get cooking! Preheat your oven to 400°F (200°C).
2. In a pot, cook the lentils in vegetable broth until they're tender, which should take about 20 minutes. Once done, drain and set aside.
3. While the lentils are cooking, grab a skillet and sauté the onion, carrots, and celery for about 5-7 minutes until they're softened and fragrant. Add the minced garlic in for the final minute.
