Brownie bottom oreo cheesecake
Ingredients:
For the Brownie Crust:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/3 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 1/2 cup chocolate chips
For the Oreo Cheesecake Filling:
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup crushed Oreo cookies
For the Topping:
- 1/2 cup crushed Oreo cookies
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan or line the bottom with parchment paper.
2. In a mixing bowl, combine the melted butter and granulated sugar. Whisk until smooth.
3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
4. Sift in the cocoa powder, flour, and salt, and fold gently until just combined. Do not overmix.
5. Fold in the chocolate chips. Pour the brownie batter into the prepared springform pan, spreading it evenly across the bottom.
6. Bake for 20-25 minutes or until the edges are set but the center is still slightly soft. Remove from the oven and let cool while preparing the cheesecake filling.
7. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well combined.
8. Add the vanilla extract and eggs, one at a time, mixing well after each addition. Gently fold in the crushed Oreo cookies until evenly distributed.
9. Pour the cheesecake filling over the cooled brownie crust, spreading it evenly.
10. Bake for 40-45 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
11. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.
