Cranberry Pecan Chicken Salad (Perfect for Sandwiches or Appetizers) recipe
Ingredients:
2 cups cooked chicken breast, shredded
1/2 cup dried cranberries
1/4 cup chopped pecans
1/2 cup mayonnaise
1/4 cup Greek yogurt (or sour cream)
1 tbsp Dijon mustard
1 tbsp honey
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped (optional)
Directions:
In a large bowl, combine the shredded chicken, dried cranberries, and chopped pecans.
In a separate smaller bowl, mix together mayonnaise, Greek yogurt, Dijon mustard, honey, salt, and pepper until smooth and well combined.
Pour the dressing over the chicken mixture and stir until everything is evenly coated.
For added flavor, refrigerate for 30 minutes before serving to allow the flavors to meld together.
Serve as a sandwich filling or as an appetizer with crackers. Garnish with fresh parsley for an extra touch!
