Super Moist Chocolate Cake with Perfect Chocolate Ganache 🍫
🛒 Ingredients
For the Cake:
1 ¾ cups all-purpose flour
2 cups white sugar
¾ cup cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
½ tsp salt
1 cup milk
½ cup oil
2 large eggs
1 tsp vanilla extract
1 stick Nescafe (2g instant coffee)
1 cup hot water (very hot)
For the Chocolate Ganache:
200g dark chocolate, finely chopped
200ml heavy cream
2 tbsp unsalted butter
📝 Instructions
1️⃣ Prepare the Cake Layers:
Preheat the Oven: Preheat to 180°C (350°F). Grease and flour two 9-inch round cake pans or line them with parchment paper.
Mix Dry Ingredients: Sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
Mix Wet Ingredients: In a separate bowl, whisk together milk, oil, eggs, and vanilla extract until smooth.
Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Add Coffee Mixture: Dissolve the stick of Nescafe in very hot water, then add this to the batter. Mix until smooth (batter will be thin).
Bake: Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2️⃣ Prepare the Chocolate Ganache:
Heat Cream: In a small saucepan, heat heavy cream over medium heat until it begins to simmer (don’t let it boil).
Melt Chocolate: Place chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let sit for 1–2 minutes. Stir gently until the chocolate is completely melted and smooth.
Add Butter: Stir in butter until fully incorporated. The ganache should be glossy and silky.
Cool: Allow the ganache to cool slightly until it thickens to a spreadable consistency.
3️⃣ Assemble the Cake:
Place one cake layer on a serving plate. Spread a generous layer of ganache on top.
Add the second layer and frost the top and sides with the remaining ganache.
Smooth the ganache for a sleek finish or create swirls for a textured look.
4️⃣ Decorate and Serve:
Let the ganache set at room temperature or refrigerate for a firmer finish.
Decorate with chocolate shavings, sprinkles, or fresh berries if desired.
